Kale Caesar

If you know me, you have probably eaten this salad. Mostly likely more than once. Or twice. I love a classic Caesar Salad too, but I prefer to pack as many nutrients into a dish using the most simple ingredients possible. Basically just to justify eating it weekly.

Serving size: 2 servings


Ingredients: 

  • 4 Tbsp Extra Virgin Olive Oil  

  • ½ Lemon, juiced

  • 1 - 3* cloves of minced Garlic 

  • 3 Tbsp Nutritional yeast

  • Dash of salt & pepper

  • ½ bunch of kale, tough stems removed, torn into pieces

  • 2 Tbsp Hemp Hearts 

Directions:

  1. Wash kale, tear from the tough stalk, and compost. Tear remaining kale into small pieces. Shake dry, and let sit to remove remaining water.

  2. In a bowl or dressing shaker, add EVOO, lemon juice, minced garlic (garlic to your tastings), nutritional yeast, and S&P. Whisk or shake until dressing is well mixed, and becomes frothy.

  3. Toss dressing with kale until all leaves are coated. Continue mixing to soften the kale. Let stand for 5 mins. Add hemp seeds to garnish. 

Tips:

Utensils on hand: Whisk, garlic press

Nutritional fact: Garlic is a terrific source of prebiotics. Prebiotics support and feed your gut flora.
